Pragmatic and inventive as i know, the Japanese managed to minimize the time of fermentation in the production of sushi. Thus began vinegar that not only shortened the cooking time considerably, but managed to add a light and spicy preparation.

The invention is not necessarily made only reduce cooking time or cost, but because Nare sushi has a very pungent odor that was not appreciated by many though, was and is considered a delicacy.

Although sashimi (thinly sliced seafood) is consumed for centuries in Japan only between 1827 and 1829 was combined with sushi.
